Red Onion and Gruyere Fougasse

Fougasse is a French flat bread, that can be found in many regions throughout France. It can be made with tomatoes, onions, cheese, herbs and lardons. It is best served with yummy freshly made soup, or as a part of picnic.

La fougasse est un pain plat, qui est trouvé dans un grand nombre des régions dans toutes la France. Elle peut être faite avec les tomates, les oignons, la fromage, les herbes et lardons. C’est mieux sevré avec la soupe qu’est fait frais ou comme une partie d’un piquenique. 

Ingredients:
500g bread flour
7g fast action yeast
2tsp salt
1tsp sugar
2tbsp olive oil
100ml boiling water topped to 300ml with cold.
100g gruyere
2 small red onions

Ingrédients:
500g de farine boulangère
7g de levure boulangère
2 c. café de sel
1c. café de sucre
2 c. soupe de huile d'olive
100ml  de eau ébouillant fait au haut de 300ml avec froid.
100g de gruyère
2 petits oignons rouges

Put the flour, yeast, salt and sugar in a bowl add the warm water mixed with oil.
Mix quickly with your hands then knead on a floured surface.
Leave to rise for 1 hour.
Cook the onion and knead into the dough, then split the dough into two and roll out.
Put the cubes on cheese on top and leave to prove for 20 minutes.
Cook for 13-15 minutes at 240˚C.

Mettez la farine, la levure, le sel et le sucre dans un saladier ajoutez l’eau chaud mélangé avec l’huile.
Mélangez vites avec les mains, puis pétrissez-la sur une surface farinée.
Laissez augmenter pour 1 heure.
Faites cuire les oignons et pétrissez-la dans la pâte, puis séparez la pâte dans deux et roulez.
Mettez les pièces du fromage sur le haut et faites lever pour 20 minutes.
Enfournez 13 -15 minutes à 240˚C.

Tart of the week

Apricots are in season at the moment so I felt that they had to be the focus of this weeks ‘tart of the week’. This is an extremely easy recipe that can be adapted to serve any amount of people; it looks spectacular and tastes great. 

Les abricots sans dans la saison ce le moment alors j’ai senti que ils ont du être le foyer de ‘la tarte de la semaine’. C’est une recette extrêmement facile que peut être adapté à servir quelque quantité des personnes ; il regarde spectaculaire et il gout belle.

Ingredients:
Puff pastry
500g apricots
1tbsp apricot jam
1 tbsp sugar
Almonds 

Les ingrédients:
Pate feuilletée
500g des abricots
1 c. soupe de la confiture des abricots
1 c. soupe du sucre
Armandes

Preheat the oven to 200˚C.
Sprinkle some water on the baking tray to help the pastry rise.
Spread out the pastry and cover with apricot jam.
Lay the apricot halves on top and sprinkle with sugar.
Put in the oven and bake for 20 minutes, then add the almonds.
Cook for 10 more minutes. Serve hot or cold with cream or ice cream.

Préchauffez le four à 200˚C.       
Saupoudrez de l’eau sur une plaque pour aider la pâte à lever.
Etalez la pâte et couvrez avec la confiture des abricots.
Arrangez les moites des abricots et saupoudrez le sucre.
Mettez dans le four et faites cuire pendant 20 minutes, puis ajoutez les amandes.
Enfournez et laissez cuire 10 minutes. Servez chaud ou froid avec la crème ou la glace.

Goats cheese scones

This is obviously not particularly French, but they are really yum, especially served warm with butter. I found this recipe in my copy of ‘Elle à table’ and have been meaning to make it ever since. Dried goats cheese was however quite hard to get hold of, but we found some eventually and had these with the onion soup I made the other day.

Ce n’est pas particulièrement français, mais ils sont très délicieuses, spécialement quand ils sont servi chaud avec le beurre. J’ai trouvé cette recette dans ma copie d’Elle à table et je voulais les faire depuis. Le fromage chèvre sec est assez difficile à trouver, mais nous l’avons trouvé éventuellement et nous avons les mange avec la soupe à l’oignon que j’ai cuit l’autre jour. 

Ingredients:
280g flour
2tsp baking powder
1 small dried goats cheese
60g soft butter
3 eggs

Ingrédients :
280g de farine
2 sachets de levure chimique
1 petit chèvre bien sec
60g de beurre mou
3 œufs

Pre-heat the oven to 200˚C.
Mix the flour with the baking powder and grated goats cheese, add the butter and make into bread crumbs.
Add the eggs and mix.
Roll out the pastry to 1 ½ cm and cut with a 5 cm cutter.
Cook for 15 minutes.

Préchauffez le four à 200˚C.
Mélangez la farine avec les sachets et la chèvre râpé, ajoutez le beurre et mélangez au des doigts.
Ajoutez  les œufs et mélangez.
Etalez la pâte avec une épaisseur de 1,5 cm et coupez avec un emporte-pièce de 5 cm.
Enfournez  pour 15 minutes.

Chocolate Cake

Over the past few weeks I have been thinking a lot about cake, and about my ever so slight addiction to the chocolate variety and I have decided that it is the fault of both Roald Dahl and Bruce Bogtrotter and a certain poem by Michael Rosen. There is a distinct lack of chocolate cake in France; you see the boxes of ‘just add eggs’ cakes but never actual chocolate cake and you never hear of France being associated with it. What I want is a slice of rich dark chocolate cake with thick fudgy icing, and by a slice I don’t mean a delicate sliver I mean a healthy chunk of cake.

The standard ingredients for such a cake go something like this, for every egg have 50g of self-rising flour, caster sugar and butter, and around 3 tbsp. of cocoa. For the icing you need icing sugar, butter, cocoa or melted chocolate and a little milk.

Pendant les dernière quelques semaine, je pensais beaucoup du gâteau, et au sujet du mon petit accro à la variété chocolat et j’ai décidé que c’est la faut du tous les deux Roald Dahl et Bruce Bogtrotter et un poème certain de Michael Rosen. Il y a une manque distincte du gâteau au chocolat en France ; on voit des boites des gâteau ou on ajoute les œufs mais jamais un vrai gâteau au chocolat et on n’entende pas de la France en étant associe avec lui. Ce que je veux c’est un tranche du gâteau au chocolat noir riche avec le glaçage épais au caramel, et d’un tranche je ne signifie un petit morceau délicat je signifie un gros morceau robuste du gâteau.

Les ingrédients standard pour tellement un gâteau vont un peu comme ce, pour chaque œuf on a besoin de 50g de la farine, le sucre et le beurre, et environ 3c. Soupe de cacao. Pour le glaçage on a besoin de la sucre pour le glaçage, le beurre, le cacao ou le chocolat fondu et un peu du lait.

Tart of the week

So today is the final course of the fête national celebrations and is also this week’s ‘tart of the week’. Tart tatin is a traditional upside down apple tart, slightly caramelized and absolutely delicious. It is a simple recipe, the only chore is the peeling and cutting of the apples, but it is worth the effort.

Alors aujourd’hui c’est le plat final des célébrations de la fête national et c’est aussi ‘la tarte de la semaine’. Tarte tatin est un traditionnel tare à l’ envers, légèrement caramélisée et absolument délicieuse. C’est une recette simple, la seule corvée est la épluchant et la coupant des pommes, mais elle vaut la peine. 

Ingredients:
100g butter
150g sugar
750g – 1kg apples
Puff pastry

Ingrédients:
100g de beurre
150g de sucre
750- 1kg de pommes
La pâte feuilletée

Peel and cut the apples into quarters.
Melt the butter in a 22cm Tarte Tatin dish, and then add the sugar.
When it starts to foam add the apples, placing them round side down.
Cook them until soft and the sugar has caramelized slightly.
Leave to cool for 10 minutes, then cover with pastry and cook at 200˚C for 20-30 minutes.
Serve warm with crème fraiche.

Épluchez et coupez les pommes dans les quarts.
Faites le beurre fondre dans un moule à Tarte Tatin, et puis ajoutez le sucre.
Quand il commence à mousser ajoutez les pommes, mettez-les avec la cote ronde à l’envers.
Lassiez refroidir pendant 10 minutes, puis couvrez-la avec la pâte et enfournez et laissez cuire à 200˚C pour 20 -30 minutes.
Servez chaud avec la crème fraiche.

Bœuf Bourguignon

For the main course I have chosen “Bœuf Bourguignon”, this is another recipe I have never attempted before, and again I’ll have my sous chef on hand to prepare the meat! This is a beef stew cooked in red wine, normally a burgundy, it really tender and the lardons and shallots give it a wonderful flavour. Stews were generally used with cheaper cuts of meat as a way of making them more tasty, the fat from lardons was used to cook the beef and the other ingredients.

Pour le plat principal j’ai choisi “Bœuf Bourguignon”, c’est une autre recette que je n’ai jamais attente avant, et encore j’ai mon sous-chef disponible pour préparer la bœuf ! C’est un ragout du bœuf cuit dans le vin rouge, normalement le bourgogne, c’est très tendre et les lardons et les échalotes le donnent une saveur merveilleux. 

Ingredients: (serves six)
1.3 kg beef
600ml red wine
1 onion
200g lardons
300g shallots
Garlic
Herbs provincial

Ingrédients:
1,3 kg de bœuf
600ml de vin rouge
1 oignon
200g de lardons
300g de échalotes
L’ail
Les herbes de provinces

Brown the meat in oil, remove from the casserole and cook the onions.
Re-add the beef, then pour in the wine and add the herbs provincial and garlic.
Cook on low heat or in an oven for 2 hours.
Cook the shallots and the lardons, then add to the stew and cook for a further hour.
Serve with potatoes and salad or ratatouille.

Faites roussir la viande dans l’huile, enlever de la casserole et faites cuire les oignons.
Re-ajoutez le bœuf, puis versez le vin et ajoutez les herbes et l’ail.
Faites cuire sur une chaleur basse ou enofurnez dans le four pendant 2 heures.
Faites cuire les échalotes et les lardons, puis ajoutez-les dans le ragout et faites cuire pour une autre heure.
Servez avec les pommes de terre et la salade ou ratatouille.

French Onion Soup

Because this week in France there is Bastille Day or La Fete National I tried to find a three course menu to make this week. I’m starting with ‘French’ onion soup; this can be eaten as a starter, lunch or main. This is a recipe that had to be made it is practically a national dish. We used locally grown onions from Roscoff and a baguette from our local boulangerie, and gruyere is the only cheese you could possibly use for this recipe. It helps if you have a sous chef to chop the onions for you!

A cause du fait que ce semaine en France il y a le jour de Bastille ou la fête national, j’ai essayé à trouver un menu de trois plats à faire ce semaine. Je commence avec la soupe à l’oignon ‘française’ ; cette peut être mangé comme un hors d’œuvre, le déjeuner ou la plat principale. C’est une recette qu’on doit faire, c’est pratiquement le plat national. J’ai utilisé les oignons localement du Roscoff et une baguette de notre boulangerie locale, et le gruyère est le seul fromage qu’on peut utiliser pour cette recette. Il aide si on a un sous-chef à couper des oignons!

Ingredients:
50g butter
1kg onions
2tbsp thyme
1.2l beef stock
1 baguette
100g gruyère

Ingrédients:
50g de beurre
1kg de oignons
2c. soupe de thym
1.2l bœuf bouillon
1 baguette
100g de gruyère

Heat the butter and gently cook the onions and the thyme, until soft but not brown, about 20 minutes.
Increase the heat and cook for 15 minutes until caramelized.
Add the stock and bring to the boil, season and simmer for 10 minutes.
Then toast the bread, drizzle with oil then add the cheese and grill.
Serve the soup with croutons on top. 

Réchauffez le beurre et légèrement faites cuire les oignons et le thym, jusqu’a c’est doux mais pas marron, environ 20 minutes.
Augmentez le chouleur et faites cuire pour 15 minutes, jusqu’à c’est caramélisé.
Ajoutez le bouillon et portez à l’ébullition, saisonnez et faites cuire à feu doux pour 10 minutes.
Puis faites griller le pain, saupoudrez avec l’huile puis ajoutez le fromage et faites griller.
Servez la soupe avec le crouton sur le haut.
