Bœuf Bourguignon

For the main course I have chosen “Bœuf Bourguignon”, this is another recipe I have never attempted before, and again I’ll have my sous chef on hand to prepare the meat! This is a beef stew cooked in red wine, normally a burgundy, it really tender and the lardons and shallots give it a wonderful flavour. Stews were generally used with cheaper cuts of meat as a way of making them more tasty, the fat from lardons was used to cook the beef and the other ingredients.

Ingredients: (serves six)
1.3 kg beef
600ml red wine
1 onion
200g lardons
300g shallots
Garlic
Herbs provincial

Ingrédients:
1,3 kg de bœuf
600ml de vin rouge
1 oignon
200g de lardons
300g de échalotes
L’ail
Les herbes de provinces

Brown the meat in oil, remove from the casserole and cook the onions.
Re-add the beef, then pour in the wine and add the herbs provincial and garlic.
Cook on low heat or in an oven for 2 hours.
Cook the shallots and the lardons, then add to the stew and cook for a further hour.
Serve with potatoes and salad or ratatouille.

So I’m all set for the weekend, I have chosen this week’s recipes and I have discovered salted caramel chocolate, it’s sweet and salty and crunchy and delicious and I found a magazine, ‘elle à table’, which has some really tasty recipes in and I have some yummy rosé flavoured with grapefruit called ‘very pamp’’ ( the whole concept disgusted my nana!). And the weather is beautiful so I am going to read, drink and eat in the garden!
