Meringues

Meringues were invented in Switzerland but the standard recipe used these days is in fact French, the Swiss make meringues over bain-marie, which are then cooled and baked. Meringues are a simple elegant dessert normally served with fruit. I made some with chocolate and almonds and some plain.

Les meringues sont invente en Suisse mais la recette standard qu’on utilise du nos jours c’est en fait français, les suisses font des meringues sur un bain-marie, puis ils sont refroidi et enfourné. Les meringues sont un désert simple et élégant, normalement on les serve avec le fruit. J’ai cuisine quelques avec du chocolat et amandes et quelques natures.

Ingredients:
4 eggs whites
200g caster sugar

Ingrédients:
4 blancs d’œufs
200g de sucre en poudre

Preheat the oven to 150˚C, line 2 baking trays.
In a mixing bowl whisk the eggs into stiff peaks.
Whisk the sugar in 1 tbsp. at a time.
Then spoon the mixture onto the baking trays.
Put the meringues into the oven then reduce the temperature and cook for 1 hour.
Turn oven off and leave then to cool in the oven.

Préchauffez le four à 150˚C, couvrez deux plaques de cuisson avec du papier.
Dans un saladier battez les blancs en neige.
Battez dans le sucre un c. soupe par fois.
Puis utilisez une cuillère pour mettre le mélange sur les plaques de cuisson.
Enfournez les meringues et réduisez la température et faites cuire pour un heure.
Eteindrez le four et laissez-les à refroidir dans le four.

Tart of the week


Today’s tart of the week was chosen by a friend of mine, it’s almond tart, I attempted to follow the recipe but I used crème de framboise instead of grand mariner and I added ground almonds and flaked almonds on top of the tarts, to make them prettier!

La tarte d’aujourd’hui de la semaine a été choisi par un ami, c’est la tarte aux amandes, j’ai attenté a suivre la recette mais j’ai utilisé la crème de framboise au lieu de grand mariner et j’ai ajouté la poudre des amandes et les amandes effilées au haut des tartines, pour les faire plus jolis.

Ingredients:
Short crust pastry
150g flaked almonds
150g sugar
500ml crème fraiche
1 tbsp. Grand-Marnier

Ingrédients :
La pâte sablée
150g d’amandes effilées
150g de sucre
50cl de crème fraiche
1 c. soupe de grand-marnier

Preheat the oven to 180˚C.
Butter a tart dish and spread over the pastry.
Mix together the crème fraiche, sugar, almonds and grand-marnier and pour into the pastry.
Cook for 30 minutes.

Préchauffez le four de 180˚C.
Beurrez un moule a tarte et garnissez-le de pate.
Incorporez la crème, le sucre, les amandes et le grand-marnier et versez-la dans la pâte.
Enfournez pour 30 minutes.

Mini Fruit Pies

I found this recipe in Elle a Table, it’s a really tasty recipe both served hot and cold. Pies are traditionally English or American but as the recipe itself is French and the ingredients also I think this makes up for that. These were made in a madeleine tray as I don’t have a muffin tin here in France but they still worked well.

J’ai trouvé cette recette dans Elle à Table, c’est une recette très goutant tous les deux servi  chaud ou froid. Les tartes ou tourtes sont traditionnellement anglais ou américain mais à cause du fait que la recette sa soi est française et tous les ingrédients aussi je pense que ce fait rattrape pour cela. Ces petite tartes faisaient dans un moules aux madeleines car je n’ai pas un moule a muffin ici en France mais ils étaient un suces.

Ingredients:
Short crust pastry, 2 lots
450g frozen forest fruits
1 tbsp. sugar
1 tbsp. kirsch
1 egg
25g ground almonds
30g of sugar
½ tbsp. crème fraiche

Ingrédients:
La pâte brisée, deux rouleaux
450g de fruits rouges surgelés
1 c. soupe de sucre en poudre
1 c. soupe de kirsch
1 œuf
25g de poudre d’amandes
30g de sucre en poudre
½ c. soupe de crème fraiche


Preheat the oven to 210˚C.
Place the first roll of short crust pastry into the bottom of buttered and floured muffin tin.
Heat the fruit over a low heat, to defrost, with the sugar and the kirsch.
Pass the fruit through a sieve to get rid of the juice. (I used this later with lemonade to make a yummy summery drink.)
Mix together the almonds, sugar, beaten egg and crème fraiche.
Put spoonfuls of each mixture into the bottoms of the muffin tin.
Then put the ‘lid’ on and roll over with a rolling pin and cook for 30 minutes.

Préchauffez le four à 210˚C.
Mettez le premier rouleau de pâte brisée au-dessous du moule à muffin, beurré et fariné.
Chauffez les fruits sur le feu doux, pour décongeler, avec le sucre et le kirsch.
Passez dans une passoire pour éliminer le jus. (Je l’utilisais plus tard avec la limonade pour faire une boisson d’été goutant.)
Incorporez les amandes, le sucre, l’œuf battu et la crème fraiche.
Mettez en cuillère chaque mélange au-dessous de moule a muffin.
Puis mettez ‘couvercle’ et roulez avec un rouleau pâtissier et enfournez pendant 30 minutes.

Macarons au Chocolat

Today I have made macarons; these are pretty little biscuits that come in many colours and flavours. They are very popular in Paris. I made these before from an Alsa box of cake mix, they turned out quite well but I felt I should make them from scratch.

Aujourd’hui j’ai cuisine des macarons; ils sont des jolies  biscuits que viennent dans beaucoup des couleurs et parfums. Ils sont très populaires en Paris. Je les ai cuisine avant d’un boit de gâteau d’Alsa, ils goutaient très bien mais je sentais comme je dois les faire de zéro.

Ingredients:
250g icing sugar
125g ground almonds
25g cocoa powder
4 large egg whites
25g caster sugar
For the filling:
90ml double cream
150g dark chocolate
45g unsalted butter

Ingrédients:
250g de sucre glacée
125g de poudre d’amandes
25g de poudre de cacao
4 blancs des gros œufs
25g de sucre
Pour la ganache :
90ml de crème
150g de chocolat noir
45g de beurre sans sel

Pre heat the oven to 180˚C, line baking sheets.
Sift together the icing sugar, ground almonds and cocoa.
Whisk the egg whites until half-stiff then add the sugar and whisk until stiff.
Fold the eggs into the dry ingredients.
Using a piping bag, pipe 5cm circles onto the baking sheets then leave to stand for 15 minutes.
Bake for 12-15 minutes.
Makes 36 circles or 18 macarons.

Préchauffez le four à 180˚C, couvrez les plaques de cuisson.
Tamisez ensemble le sucre glacé, la poudre d’amandes et le cacao.
Battez les œufs puis ajoutez le sucre et battez en neige.
Incorporez les œufs dans les ingrédients secs.
En utilisant un sac de glaçage, décorez des cercles sur les plaques et laissez pour 15 minutes.
Enfournez pour 12-15 minutes.
Faites 36 cercles et 18 macarons.

It’s easier to make perfect circles if you spoon a tsp of mixture into the bottoms of a muffin tin or maybe you could try using a crumpet ring.
C’est plus facile à faire des cercles parfaits si on utilise une cuillère a café de la mélange dans le fond d’une moule a muffin ou peut-être on peut utiliser une ronde de ‘crumpet’.

Tart of the week

Apricots are in season at the moment so I felt that they had to be the focus of this weeks ‘tart of the week’. This is an extremely easy recipe that can be adapted to serve any amount of people; it looks spectacular and tastes great. 

Les abricots sans dans la saison ce le moment alors j’ai senti que ils ont du être le foyer de ‘la tarte de la semaine’. C’est une recette extrêmement facile que peut être adapté à servir quelque quantité des personnes ; il regarde spectaculaire et il gout belle.

Ingredients:
Puff pastry
500g apricots
1tbsp apricot jam
1 tbsp sugar
Almonds 

Les ingrédients:
Pate feuilletée
500g des abricots
1 c. soupe de la confiture des abricots
1 c. soupe du sucre
Armandes

Preheat the oven to 200˚C.
Sprinkle some water on the baking tray to help the pastry rise.
Spread out the pastry and cover with apricot jam.
Lay the apricot halves on top and sprinkle with sugar.
Put in the oven and bake for 20 minutes, then add the almonds.
Cook for 10 more minutes. Serve hot or cold with cream or ice cream.

Préchauffez le four à 200˚C.       
Saupoudrez de l’eau sur une plaque pour aider la pâte à lever.
Etalez la pâte et couvrez avec la confiture des abricots.
Arrangez les moites des abricots et saupoudrez le sucre.
Mettez dans le four et faites cuire pendant 20 minutes, puis ajoutez les amandes.
Enfournez et laissez cuire 10 minutes. Servez chaud ou froid avec la crème ou la glace.
