Bœuf Bourguignon

For the main course I have chosen “Bœuf Bourguignon”, this is another recipe I have never attempted before, and again I’ll have my sous chef on hand to prepare the meat! This is a beef stew cooked in red wine, normally a burgundy, it really tender and the lardons and shallots give it a wonderful flavour. Stews were generally used with cheaper cuts of meat as a way of making them more tasty, the fat from lardons was used to cook the beef and the other ingredients.

Pour le plat principal j’ai choisi “Bœuf Bourguignon”, c’est une autre recette que je n’ai jamais attente avant, et encore j’ai mon sous-chef disponible pour préparer la bœuf ! C’est un ragout du bœuf cuit dans le vin rouge, normalement le bourgogne, c’est très tendre et les lardons et les échalotes le donnent une saveur merveilleux. 

Ingredients: (serves six)
1.3 kg beef
600ml red wine
1 onion
200g lardons
300g shallots
Garlic
Herbs provincial

Ingrédients:
1,3 kg de bœuf
600ml de vin rouge
1 oignon
200g de lardons
300g de échalotes
L’ail
Les herbes de provinces

Brown the meat in oil, remove from the casserole and cook the onions.
Re-add the beef, then pour in the wine and add the herbs provincial and garlic.
Cook on low heat or in an oven for 2 hours.
Cook the shallots and the lardons, then add to the stew and cook for a further hour.
Serve with potatoes and salad or ratatouille.

Faites roussir la viande dans l’huile, enlever de la casserole et faites cuire les oignons.
Re-ajoutez le bœuf, puis versez le vin et ajoutez les herbes et l’ail.
Faites cuire sur une chaleur basse ou enofurnez dans le four pendant 2 heures.
Faites cuire les échalotes et les lardons, puis ajoutez-les dans le ragout et faites cuire pour une autre heure.
Servez avec les pommes de terre et la salade ou ratatouille.

Tart of the week

Quiche comes from the Alsace region of France and is this week’s ‘tart of the week’. I have made a quiche Lorraine with ham leftover from yesterday’s dinner! Quiche can be eaten on any occasion and can be served with anything, traditionally in Lorraine it is made without cheese and with half a pint of double cream so this is our version of the recipe.

La quiche vient de la région alsace de France et c’est ‘le tarte de la semaine’ pour cette semaine. J’ai cuit une quiche lorraine avec le jambon du diner hier ! On peut manger la quiche sur aucune occasion et server avec quelque chose, traditionnellement en Lorraine c’est fait sans le fromage et avec un quartier d’un litre du crème épaisse alors c’est notre version de la recette.  

This is my nana’s recipe:
Puff pastry
3 large eggs
Milk
Ham/ smoked bacon
Emmental/ gruyere
Seasoning

C’est la recette de ma nana:
La pâte feuilletée
3 œufs grands
Le lait entier
Le jambon/ le lard fume
Emmental/ gruyère
Assaisonnement

Spread the pastry into a tart mould.
Chop up the ham and put in the mould sprinkle the cheese on top.
Beat the eggs, top up with milk to 500ml, and add the seasoning.
Pour over the mould, cook at 200˚C for 20 minutes then lower to 180˚C for 10 minutes.
Serve hot with salad and bread, delicious.
Étalez la pâte dans le moule à tarte.

Coupez le jambon et mettez dans le moule et saupoudrez le fromage sur le haut.
Battez les œufs, ajoutez le lait au 500ml, et ajoutez l’assaisonnement.
Versez la mixture sur la moule, enfournez à 200˚C et laissez cuire 20 minutes puis réduisez à 180˚C pendant 10 minutes.
Servez chaud avec de la salade et le pain, délicieuse.
